½ cup chia seeds
1.5 tablespoons instant espresso powder

1 cup plain Greek yogurt

1 teaspoon vanilla extract
Unsweetened cocoa powder for dusting

Instructions

  1. Gather all pudding base ingredients.
  2. Blend all base ingredients in a high-speed blender until smooth.
  3. Divide blended mixture evenly into four jars.
  4. In a separate bowl, whisk together topping ingredients until smooth.
  5. Spoon topping over each pudding jar and smooth the surface.
  6. Dust the top of each jar generously with unsweetened cocoa powder.
  7. Cover and refrigerate for at least 2 hours, preferably overnight.
  8. Serve chilled.
