Soft, fruity strawberry cookies with a creamy chocolate center – the perfect easy and cute dessert for any party.

1 box (15.25 oz) strawberry cake mix
8 tablespoons (1/2 cup) plant-based butter, melted and cooled
1 large egg
4 ounces cream cheese, softened
Optional: powdered sugar or pink granulated sugar
30 milk chocolate candy pieces, unwrapped

Instructions

  1. Combine strawberry cake mix, melted plant-based butter, and egg in a large bowl until smooth.
  2. Add softened cream cheese and mix until thick and fully incorporated.
  3. Cover dough and refrigerate for at least 1 hour.
  4. Preheat oven to 350°F and line baking sheets with parchment paper.
  5. Scoop dough into tablespoon-sized balls.
  6. Roll in powdered sugar or pink sugar if using, or place plain on baking sheet.
  7. Bake for 8–10 minutes until edges are set but centers are soft.
  8. Rest cookies 1–2 minutes, then gently press a chocolate candy piece into the center.
  9. Transfer to a wire rack and cool completely.

  • Chilling the dough is essential for the right texture.
  • Press the chocolate into the cookies while they are still warm for best adhesion.
