Fudgy and decadent Salted Chocolate Protein Balls made with Medjool dates, cacao, and protein powder for a healthy, energizing snack.

Ingredients

1 1/2 cup (275g) medjool dates
3 Tablespoons oat flour
3 Tablespoons cacao powder
1 scoop (25g) chocolate protein powder
2 Tablespoons maple syrup
2 Tablespoons almond or cashew butter
1/2 teaspoon sea salt
1/2 cup dark chocolate chips
1/2 teaspoon coconut oil
Flaky sea salt for topping

Instructions

  1. Add dates, oat flour, cacao powder, protein powder, maple syrup, nut butter, and sea salt to a food processor.
  2. Blend until the mixture forms a sticky dough, adding 1-2 teaspoons of water if needed to help it stick.
  3. Roll the dough into 12 even-sized balls using your hands or a scoop.
  4. Melt dark chocolate chips and coconut oil in the microwave in 30-second intervals until smooth.
  5. Dip each ball into the melted chocolate, letting excess drip off, then place on parchment paper.
  6. Sprinkle immediately with flaky sea salt.
  7. Refrigerate or freeze for 10-15 minutes until the chocolate shell sets.

Notes

  • If dates are too dry, soak them in warm water for 10 minutes before use.
  • Store in an airtight container in the fridge for up to 2 weeks.
