1 cup old fashioned rolled oats
1 cup vanilla protein powder
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 Tablespoon pumpkin pie spice
1/4 cup maple syrup
1 cup canned pumpkin puree
1/2 cup oat milk
2 Tablespoons dairy-free chocolate chips

Instructions

  1. Preheat oven to 350°F and prepare an 8×8 baking dish with parchment paper or non-stick spray.
  2. In a large bowl, whisk together oats, protein powder, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In a separate bowl, whisk the maple syrup, pumpkin puree, and oat milk until smooth.
  4. Incorporate the dry ingredients into the wet mixture, stirring until just combined.
  5. Pour the batter into the baking dish and top with dairy-free chocolate chips.
  6. Bake for 20 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool completely before slicing into 16 bars.
