Giant bakery-style chocolate chip cookies stuffed with a festive marshmallow peep for a gooey, colorful surprise.

Ingredients

2 sticks Unsalted Butter (room temperature)
1/2 cup Granulated Sugar
3/4 cup Brown Sugar
2 Large Eggs (room temperature)
2 tspn Vanilla Extract
1/2 tspn Baking Soda
1/2 tspn Baking Powder
1 tbsp Cornstarch
3/4 tspn Salt
3 cups All-Purpose Flour
2 cups Semi-Sweet Chocolate Chips
1/2 cup Easter Sprinkles
1 package Festive Marshmallow Treats (8 count)

Instructions

  1. Cream butter and both sugars in a stand mixer on medium-high for 5 minutes until light and fluffy.
  2. Add eggs one at a time, beating well after each addition. Mix in vanilla for an additional minute.
  3. Sift together flour, cornstarch, salt, baking soda, and baking powder.
  4. Add dry ingredients to the wet mixture on low speed until just combined.
  5. Fold in the chocolate chips and sprinkles by hand or on low speed.
  6. Portion the dough into 8 large rounds (approx 4oz each).
  7. Flatten each dough ball, place a marshmallow treat in the center, and wrap the dough tightly to seal.
  8. Chill the stuffed dough balls in the refrigerator for at least 2 hours.
  9. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  10. Bake 4 cookies per sheet for 14-16 minutes until the edges turn golden brown.
  11. Allow cookies to cool on the baking sheet for 20-30 minutes to let the center set.

  • Do not skip the chilling stage or the marshmallows will leak.
  • Ensure the dough is sealed tightly with no visible marshmallow before baking.
  • Use vegetarian-friendly marshmallow options if preferred.
