A delicious, high-protein no-bake treat combining creamy peanut butter, fiber-rich oats, and a smooth chocolate coating.

Ingredients

2/3 cup peanut butter
3/4 cup old fashioned rolled oats
2 tbsp maple syrup
1/2 cup peanut butter (for filling)
3 tbsp protein powder
1 cup dark chocolate chips
2 tsp coconut oil (for melting chocolate)
Flakey sea salt

Instructions

  1. In a medium bowl, mix 2/3 cup peanut butter and maple syrup until smooth.
  2. Stir in the rolled oats until the mixture is fully combined.
  3. Press approximately 2 tbsp of the oat mixture into each cavity of a silicone muffin liner.
  4. Whisk together 1/2 cup peanut butter and protein powder, then spread a layer over each oat base.
  5. Place the tray in the freezer for 20 minutes.
  6. Melt chocolate chips with oil in the microwave in 30-second bursts until smooth.
  7. Pour melted chocolate over the chilled cups and top with flakey sea salt.
  8. Freeze for an additional 20 minutes until set, then remove from liners and enjoy.

Notes

  • Use certified gluten-free oats if necessary.
  • Store in an airtight container in the freezer for the best texture.
