Peach Butter Swim Biscuits

Tender, fluffy biscuits baked in a pool of butter and bursting with sweet peach flavor, finished with a simple vanilla glaze.

Ingredients

2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon granulated sugar
1 teaspoon salt
1 1/2 cups buttermilk
1/2 cup unsalted butter, melted
1 1/2 cups canned or fresh diced peaches (drained if using canned)
1/4 cup peach juice or syrup (from canned peaches or fresh puree)
1 cup powdered sugar
12 tablespoons milk
1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 450°F (232°C). Pour melted butter into a 9×9-inch baking dish.
  2. In a large bowl, mix flour, baking powder, sugar, and salt. Stir in buttermilk and peach juice until just combined. Fold in diced peaches.
  3. Pour the batter over the melted butter in the baking dish. Do not stir.
  4. Bake for 25–30 minutes or until golden brown on top and edges are set.
  5. Let cool slightly. Mix glaze ingredients and drizzle over warm biscuits. Serve warm or at room temperature.

Notes

  • For best results, do not overmix the batter. A few lumps are okay.
  • Fresh, ripe peaches are ideal, but well-drained canned peaches work perfectly.
  • The biscuits are best served warm on the day they are made.
