1 tsp baking soda
1 tsp ground ginger
½ tsp cinnamon
¼ tsp nutmeg
Pinch of salt
½ cup unsalted butter (melted)
¾ cup raw honey
2 large eggs
1 cup fresh orange juice
Zest of 2 oranges
1 tbsp grated fresh ginger
2 tbsp honey (for optional glaze)
2 tbsp orange juice (for optional glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your baking pan.
  2. In a bowl, whisk together flour, baking soda, ginger, cinnamon, nutmeg, and salt.
  3. In a separate bowl, combine melted butter, honey, and eggs.
  4. Stir in orange juice, orange zest, and grated ginger.
  5. Gradually fold the dry ingredients into the wet mixture until just combined (avoid overmixing).
  6. Pour the batter into the prepared pan and bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.
  7. For extra flavor, brush the cake with the optional honey-orange glaze while warm.
  8. Allow the cake to cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
