Classic Mud Hen Bars: a triple-layer dessert with a soft cookie base, gooey chocolate-marshmallow filling, and a crisp brown sugar meringue topping.

1/2 cup unsalted butter, room temperature
1 cup granulated sugar
1 teaspoon pure vanilla extract
3 large eggs (separated)
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup miniature vanilla marshmallows
1 cup semi-sweet chocolate chips
1 cup packed light brown sugar

Instructions

  1. Preheat oven to 350°F. Lightly coat a 9×13-inch pan.
  2. Cream butter and granulated sugar. Add vanilla, 1 whole egg, and 2 egg yolks; mix. Whisk in flour, baking powder, and salt until just combined. Spread in pan.
  3. Evenly top batter with chocolate chips and marshmallows.
  4. In a clean bowl, beat the 2 egg whites until stiff peaks form (2-3 mins). Fold in brown sugar. Spread over marshmallows.
  5. Bake 30-35 mins until top is golden brown. Cool completely before cutting.
