Soft, chewy cookies bursting with fresh key lime flavor, topped with a tangy sweet glaze for the perfect citrus treat.

½ cup unsalted butter (113g) (softened to room temperature)
1 large egg (room temperature)
¾ cup sugar (150 g)
¼ cup light brown sugar (50g)
1 tsp vanilla extract
23 tsp key lime zest
1 ¾ cup flour (219g)
1/2 tsp baking soda
1/2 tsp salt
1 cup powdered sugar
1 Tbsp key lime juice
12 Tbsp milk
¼ tsp vanilla
½ tsp key lime zest
Pinch of salt (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream butter, sugar, and brown sugar until fluffy. Beat in egg, vanilla, and lime zest.
  3. Whisk flour, baking soda, and salt in a separate bowl. Gradually mix into wet ingredients until just combined.
  4. Scoop dough into balls, place on sheets 2 inches apart. Bake for 10-12 minutes until edges are light golden.
  5. Cool on sheet for 5 minutes, then transfer to a wire rack to cool completely.
  6. For glaze: Sift powdered sugar. Whisk in lime juice, 1 Tbsp milk, vanilla, pinch of salt, and zest. Adjust consistency with more milk if needed.
  7. Drizzle or spread glaze over cooled cookies. Let set for 30 minutes before serving.

Notes

  • For best flavor, use fresh key lime zest and juice.
  • Chilling dough for 30 minutes can prevent excess spreading.
  • Store in an airtight container at room temperature for up to 3 days.
