A stunning tropical layer cake infused with sweet guava, topped with creamy frosting and a glossy glaze.

Ingredients

1 box Strawberry Cake Mix
1 cup Guava Nectar or Juice (for batter)
3 large Eggs (Room temperature)
1/2 cup Coconut Oil (Melted)
8 oz Cream Cheese (Room temperature)
1/2 cup Granulated Sugar
1 tsp Vanilla Extract
8 oz Whipped Topping (Thawed)
2 1/2 cups Guava Nectar or Juice (for glaze)
1/2 cup Granulated Sugar
2 tbsp Cornstarch
1/4 cup Water (for slurry)
1 cup Sweetened Coconut Flakes (for garnish)

Instructions

  1. Preheat oven and prepare baking pan.
  2. Mix cake mix, 1 cup guava nectar, eggs, and oil. Beat for 2 min.
  3. Bake as directed on box until toothpick comes out clean. Cool completely.
  4. Beat cream cheese until smooth. Add sugar and vanilla; beat until fluffy.
  5. Fold in whipped topping until combined. Spread over cooled cake.
  6. For glaze: Simmer 2.5 cups nectar and 1/2 cup sugar. Mix cornstarch and water into slurry.
  7. Whisk slurry into simmering nectar. Cook 3-5 min until thick. Cool slightly.
  8. Pour warm glaze over frosted cake. Immediately sprinkle with coconut flakes.

Notes

  • Ensure all dairy ingredients are at room temperature for smooth mixing.
  • Let glaze cool slightly before pouring to prevent melting the frosting.
  • Cake must be completely cool before frosting.
  • Store covered in the refrigerator.
