A festive and nutritious snack featuring the bright flavors of orange zest and tart cranberries combined with creamy cashew butter and protein.

Ingredients

1 1/2 cups rolled oats
2 scoops vanilla protein powder
1 cup cashew butter
1/4 cup maple syrup
1 teaspoon orange zest
1/2 teaspoon vanilla extract
1/4 teaspoon ground ginger
1/4 teaspoon sea salt
12 Tablespoons almond milk (as needed)
1/4 cup dried cranberries (chopped)
1/4 cup white chocolate chips

Instructions

  1. Combine rolled oats, protein powder, cashew butter, maple syrup, orange zest, vanilla, ginger, and sea salt in a large mixing bowl.
  2. Stir the mixture thoroughly until a dough forms. Use your hands to knead the dough if it feels too thick.
  3. If the dough is too dry, add almond milk one tablespoon at a time until the desired consistency is reached.
  4. Fold in the chopped dried cranberries and white chocolate chips until evenly distributed.
  5. Use a small cookie scoop to portion the dough and roll into 24 even balls.
  6. Place in the refrigerator for 15-20 minutes to set before serving.
