Decadent, layered bars combining a buttery graham cracker crust, a smooth cream cheese filling, and a soft chocolate chip cookie dough topping. The perfect make-ahead dessert for feeding a crowd.

2 1/4 cups graham cracker crumbs (from about 16 sheets)
9 tablespoons melted butter
1/3 cup granulated sugar
2 (8 oz.) packages cream cheese, softened
1/2 cup granulated sugar
1/4 cup sour cream
1 large egg
1 tablespoon lemon juice
1 teaspoon vanilla extract
11 tablespoons butter, softened
1/2 cup white sugar
1/2 cup packed brown sugar
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 large egg
1/4 teaspoon salt
1 1/4 cups chocolate chips

Instructions

  1. Preheat oven to 325°F (163°C). Line a 9×13-inch pan with parchment paper.
  2. Mix graham crumbs, 9 tbsp melted butter, and 1/3 cup sugar. Press firmly into pan. Bake crust for 10 min, then cool slightly.
  3. Beat softened cream cheese and 1/2 cup sugar until smooth. Add sour cream, 1 egg, lemon juice, and 1 tsp vanilla. Mix until combined. Pour over crust.
  4. In a new bowl, beat 11 tbsp butter, 1/2 cup white sugar, and 1/2 cup brown sugar until fluffy. Beat in 1 1/2 tsp vanilla and 1 egg.
  5. Whisk flour and salt, then mix into butter mixture on low. Fold in chocolate chips.
  6. Drop small pieces of cookie dough evenly over cream cheese layer.
  7. Bake for 35-45 minutes until edges are golden and center is set. Cool completely on a rack.
  8. Refrigerate for at least 4 hours (preferably overnight). Lift from pan using parchment and cut into 48 bars.

Notes

  • Ensure all dairy ingredients (cream cheese, butter, sour cream, eggs) are at room temperature for a smooth batter.
  • Chilling is mandatory for clean slices. Do not skip the 4+ hour refrigeration.
  • Store leftover bars in an airtight container in the refrigerator for up to 5 days.
