Frozen Greek yogurt bites with a sweet-tart blueberry swirl, a perfect make-ahead healthy snack for all ages.

Ingredients

1 cup plain Greek yogurt
1/2 cup fresh or frozen blueberries
2 tbsp honey or pure maple syrup
1 tsp lemon juice
1/2 tsp pure vanilla extract
1 tsp cornstarch dissolved in 1 tbsp water (optional, for thicker swirl)

Instructions

  1. In a small saucepan, combine blueberries, honey (or maple syrup), and lemon juice. Simmer over medium heat for 5-7 minutes, until berries soften and release juices.
  2. For a thicker swirl, stir in the dissolved cornstarch mixture and cook for 1 more minute until glossy. Remove from heat and let cool completely.
  3. In a separate bowl, mix the Greek yogurt and vanilla extract until smooth. Taste and add a little more sweetener if desired.
  4. Spoon the yogurt mixture into silicone molds or a lined mini muffin tin, filling each cavity about 3/4 full.
  5. Add a small spoonful of the cooled blueberry compote on top of each yogurt portion. Use a toothpick to gently swirl and create a marbled effect.
  6. Transfer the molds to the freezer and freeze for at least 3-4 hours, or until completely solid.
  7. Pop the frozen bites out of the molds and store in an airtight container in the freezer. Let sit at room temperature for 2-3 minutes before eating for the best creamy texture.

Notes

  • For babies under 1 year, use maple syrup instead of honey.
  • Full-fat Greek yogurt yields the creamiest texture.
  • Ensure the blueberry compote is completely cool before swirling to prevent the yogurt from melting.
  • Store in freezer for up to 2 months.
